  • 250 gm Paneer
  • 2 Onion (Finely chopped)

  • Garam Masala (1 Tablespoon)
  • Turmeric (1 Tablespoon)
  • Red Chili Powder (1 Tablespoon)

Instructions:

  • Heat Butter in a pan.
  • Saute Onion, Ginger-Garlic paste until its color changes.
  • Add Tomato Puree and cook well.
  • Add spices (Salt, red chili powder, turmeric, garam masala)
  • Mix cream and cook on low flame.
  • Add the pieces of Paneer and cook for few minutes.

  • Basmati Rice (2 cup)
  • Vegetables of your choice (1 cup)
  • Peas, Carrot, Capsicum, Cauliflower, Tomato
  • Oil (2 Tablespoon)
  • 1 Onion (Chopped)
  • 6-7 Green Chili
  • Ginger-Garlic paste
  • Salt as per taste
  • 3 Cloves
  • 2 Green Cardamom
  • Cumin (1 Tablespoon)
  • 2-3 Black Pepper
  • 1 Black Cardamom
  • 1 Bay leaf
  • 1 piece of Cinnamon
  • 1 Star Anise
  • Fennel (optional)

Instructions:

  • Soak the rice for 30 minutes.
  • Heat the oil in a pan, add garam masala (cumin, cloves etc.)
  • Add Onion and fry until its color changes to golden brown.
  • Add Ginger-Garlic paste and cook well.
  • Mix the vegetables and stir for 5 minutes.
  • Add Water (4 cup)
  • When it becomes slightly hot, add rice.
  • Cook it for 10 minutes on low flame (in an open pan).
  • Serve with Raita.

3. Cauliflower Cheese

Ingredients:

  • 1 Cauliflower (cut into pieces)
  • Milk ( 2 cup)
  • Butter (2 Tablespoon)
  • Flour (2 Tablespoon)
  • Grated Cheese ( 1 cup), Cheddar cheese or Mozzarella
  • Mustard powder (1/2 Tablespoon) optional
  • Black pepper powder (1/2 Tblespoon)
  • Salt as per taste
  • Bread crumbs, almonds and coriander leaves for garnishing (Optional)

Instructions:

  • First of all, boil water in a big vessel and add cauliflower pieces to it and boil for 5 minutes until the cauliflower becomes a little soft then drain the water and keep the cauliflower aside.
  • Now heat butter in a pan, add flour to it and fry it on low flame while stirring continuously for 2-3 minutes until its rawness goes away.
  • Now add milk slowly and keep stirring continuously so that lumps do not form.
  • Add grated cheese, mustard powder, black pepper powder and salt to this mixture.
  • Mix well until the cheese melts and your cheese sauce will be ready.
  • Now spread the boiled cauliflower in a baking dish and pour prepared cheese sauce over it.
  • Sprinkle breadcrumbs, almonds and coriander leaves on top (If desired), so that a nice crispy layer is formed when cooked.
  • Preheat the oven to 180°C and bake it for 20-25 minutes until the cheese is golden and bubbling on top.
  • Take it out when it’s done and serve it with garlic bread or roasted potatoes.
